HOW COMMON IS EPILEPSY?

Worldwide there are approximately 65 million people with epilepsy and almost 3 million of them are in the US. Each year there are 200,000 new cases of epilepsy diagnosed in the US. That's almost the same as the number of women diagnosed with invasive breast cancer each year (226,870 according to the American Cancer Society). Most of the new cases of epilepsy are  in the young and in those 65 or older. However, epilepsy can develop at any age. New data shows that 1 in 26 people will develop epilepsy in their lifetime. Think about all the people you are connected to in Facebook or LinkedIn and imagine if 1 out of every 26 of them were affected by epilepsy.




26 Grape and Goat Cheese Bites

1/2 cup Ricotta cheese
1/2 cup goat cheese

1 T honey
1/2 cup grapes, each grape cut into 3 pieces
8 paper thin slices of prosciutto
26 small round pita crackers (I used a brand called Pita Bites)*
Salt and black pepper

* if you can't find pita bites, you can cut baguette bread into thin slices, drizzle with olive oil and toast under the broiler in the oven

Mix together ricotta and goat cheese in one small bowl. In another bowl, combine sliced grapes with honey.  Spread approximately 1 T of cheese mixture on pita rounds. Next, tear off a piece of the prosciutto and layer it on the cheese. Then, top prosciutto with the grapes. Sprinkle with salt and pepper. Makes 26 bites. Enjoy!
