PUMP UP THE PURPLE!
So, I was thinking about how powerful the pink campaign for Breast Cancer has been and how you can hardly go anywhere or watch TV without seeing something pink for this cause. Even the NFL players and refs are wearing pink for Breast Cancer awareness! It's truly amazing and inspiring.
Rather than post an epilepsy fact today, I thought I'd pose a question: What can we do to "pump up the purple" and raise the volume on epilepsy awareness? It can be as simple as hosting a purple potluck or purple tailgate and telling your friends and family one thing about epilepsy. You can also support some great causes whose mission is to fund epilepsy research, help connect people with epilepsy and their families with specialists and provide financial assistance to those who can't afford treatment. I've listed a few on the left. Your local Epilepsy Foundation is likely hosting a number of events this month (and also all year long) like walks or dine-outs. If you live in Georgia, the local EF is hosting a dine out at South City Kitchen in Smyrna on Wednesday, November 7th and a percent of the proceeds go to supporting epilepsy. Great food and a great cause!! Send me or post your ideas too!
Ricotta Pancakes with Blueberry Sauce
Makes 12-14 medium pancakes
1 2/3 cup of milk
2 eggs
2 cups pancake mix
1 cup ricotta
2 Tb brown sugar
Butter for pan
Blueberry Sauce
2 cups fresh or frozen blueberries
1 cup real maple syrup
2 T lemon juice
In a saucepan, combine the blueberries, syrup and lemon juice on medium low heat and simmer for 20 minutes. Then let cool.
In a bowl, combine the 1 2/3 cup of milk and eggs and whisk. Then mix in the pancake mix, ricotta, and brown sugar. Let batter sit for a few minutes to thicken. Melt a tablespoon of butter in a skillet and cook pancakes for 2-3 minutes on each side until golden brown. Top with blueberry sauce. Refrigerate remaining sauce for up to a week in frig.
